No fuss, just throw it together with tinned tomatoes and a little fresh coriander to take your taste buds to heaven. Scatter corn chips on an oven tray and spread with salsa, then serve topped with grated cheese- add corn kernels, chopped jalapenos and chilli for a real Mexican taste!
